How Processing Changes a Coffee’s Character
Washed, natural, and honey processes change clarity, body, and fruit character. The method’s name still depends on how carefully the coffee was dried.

Brazil · Medium-Dark
Chocolate, hazelnut, and caramel. A medium-dark natural from Cerrado.

A sweet, low-acid Brazil. Natural processing leaves the fruit on the seed while it dries, which is why this cup leans toward chocolate, hazelnut, and caramel rather than bright citrus. Useful as a daily filter or as the base of an espresso.
The cherry is dried whole. Fruit sugars stay close to the seed, so the cup is often sweeter and heavier.
More cocoa and body. The origin is still there, but the roast is louder.
