How Processing Changes a Coffee’s Character
Washed, natural, and honey processes change clarity, body, and fruit character. The method’s name still depends on how carefully the coffee was dried.

Honey processing leaves some of the fruit mucilage on the seed while it dries. It is not honey added to the coffee. Tarrazú, in Costa Rica, is known for a clean, sweet cup. This lot reads as peach, honey, and milk chocolate.
Some fruit mucilage is left on the seed while it dries. Sweeter than a washed coffee, cleaner than a natural.
Origin and roast both show. A usual place for caramel as well as fruit.
