Sumatra is often wet-hulled, called giling basah. The parchment is stripped while the seed is still damp. That is why the cup is heavy, low in acidity, and earthy: cedar, dark plum, spice. It tastes nothing like a washed East African coffee, and it is not meant to.
The parchment is stripped while the bean is still damp. Body goes up and the cup turns earthy. Common in Sumatra.
