How Processing Changes a Coffee’s Character
Washed, natural, and honey processes change clarity, body, and fruit character. The method’s name still depends on how carefully the coffee was dried.

Red cherry, caramel, and lime zest. A washed Huila.

Washed processing removes the fruit before drying, which keeps this Huila clearer and brighter: red cherry, caramel, lime zest. Huila is a department in southern Colombia. Altitude and variety still change from farm to farm, so this is one lot from that region, not every coffee grown there.
The fruit is removed before drying. The cup is usually cleaner, and acidity is easier to taste.
Origin and roast both show. A usual place for caramel as well as fruit.
