What Roasting Changes in the Cup
Roasting creates the flavours you recognise as coffee, and it can either reveal or cover the work done at origin. Light and dark are a spectrum, not a virtue scale.

Colombia · Medium-Dark
Dark chocolate and citrus. Built for espresso and milk drinks.

A blend, not a single farm. The cup is set up for espresso: dark chocolate, citrus, and caramel, with enough body for milk. A blend mixes coffees so the result stays steady from bag to bag.
The cherry is dried whole. Fruit sugars stay close to the seed, so the cup is often sweeter and heavier.
More cocoa and body. The origin is still there, but the roast is louder.
